Mt. Becher Trail Water Buffalo Washed Rind

Rich, savoury and beautifully distinctive, Mt. Becher Trail is our small-batch Water Buffalo Washed Rind cheese, handcrafted from rich Vancouver Island water buffalo milk.

The water buffalo milk gives this cheese a malty texture and a naturally rich, creamy character, while the washed rind encourages deeper, more complex flavours to develop as the cheese matures.

Expect toasted nut notes, a bright tang and a lingering savoury finish, with a flavour profile that may remind you of some of the qualities people love in a good Manchego — nutty, slightly sweet, pleasantly tangy and wonderfully satisfying — while remaining very much its own Vancouver Island cheese.

As it comes to room temperature, Mt. Becher Trail becomes increasingly aromatic and expressive. The paste develops a rich, malty character, with layers of buttery milk, toasted nuts and gentle earthy notes leading into a clean, savoury finish.

It is a beautiful cheese for a board alongside olives, almonds, quince or preserves, but it is equally at home shaved over roasted vegetables, tucked into a sandwich or simply cut into wedges and enjoyed with good bread and a glass of wine.

Made in small batches with Vancouver Island water buffalo milk, which naturally contains A2 beta-casein protein, Mt. Becher Trail is a wonderful expression of the milk, the craft and the Island where it is made.
