Fresh, smooth and beautifully versatile, our Natural Pastures Small Batch Ricotta is one of those cheeses that can move effortlessly from breakfast to lunch, dinner and dessert. This is one of our small batch items available in our Artisan Cheese Shop at the factory and a few small stores in Courtenay.
Made in small batches, it has a soft, creamy texture and a clean, delicate flavour that makes it just as delicious served straight up with some honey, as it is worked into a favourite recipe.
Our ricotta does not need much fuss — sometimes the best way to enjoy it is to spoon it into a bowl, add a drizzle of honey and whip it until light and silky.”
Spread whipped ricotta over warm sourdough or toasted baguette and finish with honey, fresh berries, roasted grapes, figs or a little cracked pepper. For a savoury version, add good olive oil, herbs, roasted tomatoes, garlic or a spoonful of pesto.
At breakfast, try it with granola, fruit and honey, or spoon it onto pancakes and waffles. For lunch, spread it generously on toast and top with tomatoes, greens or roasted vegetables. Add dollops to pizza just before serving, fold it through pasta with lemon and herbs, or use it in lasagna, stuffed shells and baked pasta dishes for a creamy, gentle richness.
