Cow Bocconcini

Bocconcini means “little bites,” and that is exactly how we think of them. Their gentle flavour makes them a natural fit for salads, antipasto platters, sandwiches and fresh summer dishes, while their soft texture allows them to absorb the flavours around them beautifully.

Made here on Vancouver Island, our Cow Bocconcini begins with fresh local milk and reflects the clean, uncomplicated character we want in a fresh cheese. There is no need for a strong or aggressive flavour — the pleasure is in the soft texture, fresh dairy character and the way it complements tomatoes, herbs, olive oil and seasonal produce.

For a classic presentation, pair Cow Bocconcini with ripe tomatoes, fresh basil, a good olive oil and a touch of sea salt. They are equally at home on a grazing board, tucked into a sandwich or served alongside local vegetables.

Bocconcini vs. Fior di Latte

Both cheeses belong to the fresh mozzarella family, but the difference is largely in shape and how you use them.

Our Cow Bocconcini is formed into small individual pieces, making it perfect for salads, entertaining and portioned bites. Fior di Latte is a larger fresh mozzarella, giving you more flexibility for slicing, tearing and melting.

Fresh, mild and beautifully versatile — Cow Bocconcini is Vancouver Island milk in one perfect little bite.

  • Michael Tchao’s Journey Around Vancouver Island: Water Buffalo, Mozzarella, and a Taste of Place
On Vancouver Island, food has a way of carrying the story of where it comes from. For Michael Tchao, his journey around the Island is not just about travel. It is about meeting the people, seeing the land, and understanding the care and the science, that goes into food before it ever reaches a plate. […]
  • Amsterdammer: The Summer Cheese That Fights With No One
Inspired by a German-style butter cheese, our Amsterdammer is mild, creamy, and wonderfully approachable. It has a gentle richness and a smooth, melt-in-your-mouth texture that makes it a favourite for young and old. Kids love it because it is mild and creamy. Adults love it because it pairs beautifully with so many foods and drinks. […]
